He was only 8 years old…
when he started skipping school to bake.
There’s a story behind every small business
Jesus was just 8 years old when he started skipping school to learn to bake. As soon as his grandmother Sabina found out Jesus was skipping school she would go snatch him from the bakery and tell him, “I’ll pay you whatever they pay you but please go to school.” He still kept going to learn the artistry of baking after school and on the weekends. The main baker would put a stool for him because he was not tall enough to reach the butcher block table where they would shape the bread.
Time passed and Jesus became a married man. He would travel along with his family to different locations in Mexico to learn new techniques and bread styles unknown to him. Bakery owners from other towns would hear about his work and invite him to work for them and learn his craft. He traveled to Cuernavaca, Santa Ana, Villa Guerrero, Sacango, Tecomatlan, Toluca, Mexico, D.F. Tijuana, Santiago, Tonatico. He finally opened up his very own bakery and was doing great. When the peso collapsed Jesus could not sustain his bakery and he migrated to the U.S. where he continued to learn American & French pastries.
He worked for Influx cafe for 10 years, he was the main baker in charge of supplying fresh baking goods for all three of their bakeries in Little Italy, Golden Hills and North Park. Jesus became ill and left Influx to start a new chapter in his life.
Jesus has finally arrived at an age where there is nothing to lose and with the help of his two daughters Maria & Jannet he started a food cottage micro bakery at home. He quickly developed a clientele and high interest for his Artisan Mexican baking offerings.
